Mapping logic follows Maxi Riedel's framework: grape skin thickness, tannin structure and aromatic profile determine bowl shape. Thick-skinned tannic reds want the tall narrowing Bordeaux to soften astringency. Thin-skinned perfumed reds (Pinot, Nebbiolo, Nerello, Frappato, Cinsault) want the wide Burgundy balloon to capture fragility. Medium-skinned savory reds (Syrah, Sangiovese, Grenache, Aglianico) want the chimney-top Hermitage shape to channel pepper and dried herbs. Aromatic whites split by acidity and oak treatment.
